heal.abstract | Nowadays, people tend to consume more healthy snacks and food. Cookies are one of the most important snacks consumed on, daily, so the bakery industry is trying to improve their properties and produce new innovative products which reflect consumers‟ needs for healthy food. The purpose of this thesis is to create an innovative cookie and also its nutritional evaluation and nutrition labeling with the current legislation. The main idea was to use by-products of pomegranate juice considering of ecological consciousness and consumers‟ need for a healthier and better way of life. The cookie called Rodi „n‟ Roll was made of pure ingredients with no preservatives and additives. It is considered to be an innovative product because of the pioneering pomegranate flour, from the internal semen of pomegranate seeds, which is made of. Its preparation was based on the use of plant-based ingredients, exclusively. The sweetness of the snack comes from the raisins and honey addition. Furthermore, there is no added sugar and the presence of the sodium chloride in the cookie is naturally involved in the ingredients used to make it. Appropriate chemical analysis and extensive research on the ingredients used were made for its nutritional evaluation. Nutrition labeling was made due to the current legislation and all rules were followed precisely. According to evaluation results, we conclude that this product is rich in fiber and has very low sodium content; therefore these are the two nutrition claims that can be listed on the nutrition label. On the basis of these nutrition claims we can also state the healthy claims of the biscuit. Finally, Rodi „n‟ Roll is a product that can provide all necessary nutrients in the right proportions for the body and can also be consumed by people with a special diet. | en |
