This study aims to investigate the functioning of the supply chain of fresh products. In particular, the way of supplying the retail outlets of fresh products with products, the operators from whom the products are procured and the problems that exist in this process is being considered.
After reviewing the supply chain and its management, as well as how it works both in Europe and Greece, the study focused on the Central Market of Thessaloniki by conducting research on fresh products and supermarkets are based in the city of Thessaloniki.

| Abstract: | H παρούσα μελέτη αποσκοπεί στη διερεύνηση της λειτουργίας της εφοδιαστικής αλυσίδας νωπών προϊόντων. Συγκεκριμένα, εξετάζεται ο τρόπος εφοδιασμού των καταστημάτων λιανικής πώλησης νωπών προϊόντων με προϊόντα, οι φορείς από τους οποίους προμηθεύονται τα καταστήματα τα προϊόντα αλλά και τα προβλήματα που υπάρχουν κατά τη διαδικασία αυτή.
Αφού έγινε βιβλιογραφική ανασκόπηση όσον αφορά την εφοδιαστική αλυσίδα και τη διαχείρισή της, αλλά και στον τρόπο λειτουργίας της τόσο στην Ευρώπη όσο και στην Ελλάδα, η μελέτη επικεντρώθηκε στη Κεντρική Αγορά της Θεσσαλονίκης με τη διεξαγωγή έρευνας σε επιχειρήσεις νωπών προϊόντων αλλά και σε σούπερ μάρκετ που εδρεύουν στην πόλη της Θεσσαλονίκης.
