In this thesis we refer to potato cultivation in the prefecture of Serres. We also do one a historical overview of the potato, including botanicals its features. We refer to potato seed in detail and its varieties. The potato cultivation technique is also analyzed commenting on each factor. Still mentioned major diseases and animal enemies. Describe the potato harvesting, sorting and standardization process. Finally there is a reference to the economic course of the potato, according to current data, in the prefecture of Serres.
