Every agricultural product has to go through a long process in order to become a trade product. From preparing the soil until sowing and harvesting, many stages are involved. Among them is the prevention of diseases as well as the plant nutrition using fertilizers. In this paper, the matter of rice cultivation, fertilization and nutrition, in the area of Municipality of Delta (Thessaloniki area, North Greece) are concerned. These stages of rice growth face many objective difficulties due to the constant presence of water in the crop, which are examined and analyzed and ways to facilitate the production process are proposed. After a short reference on rice and its history, analysis of the cultivation stages are concerned, with emphasis on fertilization and nutrition of the rice crop. Also, irrigation, harvesting and storage of rice seeds are discussed. Finally, the most recent data collected about the cultivated areas, the production quantities and the irrigation water are listed, gathered by the Land Reclamation Institute and the Municipality of Delta.

| Abstract: | Κάθε γεωργικό προϊόν χρειάζεται να περάσει μια μεγάλη διαδικασία ώστε να καταστεί εμπορικό προϊόν. Από την προετοιμασία του εδάφους και τη σπορά μέχρι τη συγκομιδή, μεσολαβούν πολλά στάδια. Ανάμεσα σε αυτά είναι η πρόληψη των ασθενειών και η θρέψη του φυτού με τη χρήση λιπασμάτων. Στην παρούσα εργασία, μαζί με το ζήτημα της καλλιέργειας ως διαδικασία, μελετάται η θρέψη και λίπανση του ρυζιού στην περιοχή του Δήμου Δέλτα. Τα στάδια αυτά αντιμετωπίζουν πολλές αντικειμενικές δυσκολίες οι οποίες εξετάζονται, λόγω της συνεχούς παρουσίας νερού στην καλλιέργεια, αναλύονται και προτείνονται τρόποι διευκόλυνσης της παραγωγικής διαδικασίας. Αφού γίνει μια γενική αναφορά στο ρύζι και την ιστορία του, ακολουθεί η ανάλυση των σταδίων από την προετοιμασία των ορυζώνων και μετά, με έμφαση στα ζητήματα της καλλιέργειας, της θρέψης και της λίπανσης του ρυζιού. Ακολουθεί η ανάλυση της άρδευσης, της συγκομιδής και της αποθήκευσης των σπόρων. Τέλος, παραθέτονται τα πιο πρόσφατα στατιστικά στοιχεία που αφορούν στις εκτάσεις που χρησιμοποιούνται για την παραγωγή ρυζιού, την παραγωγή και το αρδευτικό νερό, όπως συγκεντρώθηκαν έπειτα από προσωπική έρευνα από τους Τ.Ο.Ε.Β (Τοπικούς Οργανισμούς Εγγείων Βελτιώσεων) που βρίσκονται στις περιοχές του Δήμου Δέλτα της Π.Ε.
