dc.description.abstractΗ εργασία αυτή αναφέρεται στο ελαιόλαδο και συγκεκριμένα στην χημική σύνθεση και στις ιδιότητες του. Αρχικά, γίνεται μία ιστορική αναδρομή της ελιάς και αναφoρά στο δένδρο της ελιάς. Στην συνέχεια, αναφέρονται τα είδη της ελιάς και οι τρόποι με τους οποίους επεξεργάζεται ο καρπός της. Ακόμη, αναφέρεται ο ρόλος και η συμβολή του ελαιόλαδου στην υγεία και στη διατροφή του ανθρώπου. Τέλος, γίνεται αναφορά και στην μεσογειακή διατροφή.el
