The cultivation of asparagus has developed rapidly over the last few years and has given producers, and especially young producers, the opportunity for high income. The purpose of this paper is the understanding and the analysis of the steps that producers need to take for the cultivation of asparagus. The ultimate aim of the paper is to examine the factors that contribute to a successful cultivation. For the achievement of this objective, the history of asparagus, its botanical characteristics and the requirements of its cultivation need to be examined. Furthermore, this project studies the profit, the subsidy provided and generally the criteria that benefit producers.

| Abstract: | Η καλλιέργεια του σπαραγγιού, αναπτύσσεται ραγδαία τα τελευταία χρόνια και αποτελεί λύση για τους παραγωγούς και ειδικά τους νέους παραγωγούς στην Ελλάδα για ένα υψηλό εισόδημα. Στόχος της παρούσας εργασίας είναι η κατανόηση και η ανάλυση των βημάτων που πρέπει να ακολουθήσει ο παραγωγός για την καλλιέργεια σπαραγγιού. Απώτερος σκοπός της εργασίας είναι η διερεύνηση όλων των παραγόντων που συνιστούν τη δημιουργία μιας πετυχημένης καλλιέργειας. Για την επίτευξη αυτού του στόχου εξετάζουμε αρχικά την ιστορία του σπαραγγιού, τα βοτανικά χαρακτηριστικά, τις απαιτήσεις της καλλιέργειας, κλπ. Έπειτα η εργασία ασχολείται και με τα εισοδήματα και τις επιδοτήσεις και όλα τα κριτήρια που επιφέρουν κέρδος στον παράγωγο.
