This paper is an introduction to Natural Language Processing, in the modern form it holds by integrating statistical methods into its application fields, at the stages of information dissemination, and presents some difficulties that arise during its implementation. In addition, there is an analysis of how text data is represented by the computing systems and known text processing architectures are described. Then, reference is made to basic functions of Natural Language Processing and their methodologies for knowledge recovery. In addition, an introduction to spaCy, a computational text processing platform and its models is introduced, and how to use it, as well as the proper introduction of a new language into it. Based on this platform, 2 functions are described for the Greek language, their results are recorded and some conclusions are drawn. Lastly, there is a proposal of future extensions of the implemented applications
