The subject of this thesis is the organic cultivation of vegetables in the area of ​​Koufalia, Thessaloniki. A reference is made to general elements of organic farming. Immediately afterwards, we make a reference to the organic cultivation of horticulture in the specific area where greenhouse planting, horticultural species, their requirements for fertilization and irrigation, their main enemies and diseases are mentioned, and how to deal with them. Nowadays, alternative crop cultivation is very important and interesting for growers. So an initiative must be taken to ensure, promote their products and record the main problems of cultivation to begin an attempt to resolve them. The consumer needs to be informed, aware of and demand healthier products free from unacceptably toxic residues. Stimulating farmers to turn to alternative forms of horticultural crops by appreciating the benefits of the ever-growing demand for such products.
