Product quality is an important issue for both consumers and the productive
world at world level. Nutritional crises have greatly sensitized consumers and
have shaken their confidence in food safety and quality.
The main trend observed in recent years is the shift towards organic food and
products. The emerging momentum predicts for the next few years extremely
important prospects for market growth both in the organic farming and
livestock sectors.
The purpose of this work is to refer to organic farming and their products in the
prefecture of Thessaloniki and the prefecture of Fthiotida. The first chapter of
the paper presents general definitions, principles, legislation and organic
certification bodies.

In the second chapter we deal with the organic production of products in the
prefecture of Thessaloniki and the points of sale of organic products in the
prefecture.
In the third chapter there is a reference to the organic production of products in
the prefecture of Fthiotida as well as to the organic sales points in the
prefecture. Finally, in our work, we present growth perspectives on organic
production and conclude on the overall set of organic production.
