The following work focuses on the presentation of the course of the dairy industry in Greece and mainly on the investigation of the situation surrounding the production of fresh milk. The purpose of the study is to investigate the legal framework that defines the specifications of 7-day-old milk. In addition, this study aims to highlight the characteristics of the dairy industry based in the area of Lagada, Thessaloniki. In addition, the purpose of the study is to present the reasons why the company AGNO closed, but the situation in which the other dairies in the area have found themselves. In order to achieve this study, two methods were used, the primary and the secondary. Secondary research focuses on documenting data coming from Internet sources and other related studies. Essentially, this part of the study is about bibliographic data review. As for the primary research, it is noted that this is a personal qualitative research, which was conducted with the contribution of the interview given by three dairies in the area of Lagada, Thessaloniki.
