In the present work the effect of cations and pH have been studied on the rheological properties of high–methoxyl (HM) pectin solutions and on the thermophysical and mechanical properties of pectin films. The rheological properties of the solutions were characterized by means of an Ubbelohde–type viscometer and a nano–rotational rheometer, while, for the study of the pectin films thermogravimetric analysis (TGA), differential scanning calorimetry (DSC) and texture analyzer (TA) have been used. The humidity of the films has been determined by using Thermogravimetric analysis (TGA) coupled with while differential scanning calorimetry (DSC), as to determine the glass transition temperature (Tg). Samples with a higher moisture content exhibited a lower glass transition temperature than samples with a lower moisture content. The water dependence of the glass transition temperature of the polymer and the polymer-salt mixtures was described by the Gordon–Taylor equation.
