Προσδιορισμός αντιοξειδωτικής δράσης και φαινολικών ενώσεων σε δείγματα σιδερίτη (Master thesis)

The aim of this study was to determine the total phenolic components and the antioxidant capacity of the variety of sideric species (S. syriaca, S. raeseri, S. euboea, S. scardica) as well as the determination of the total phenolic components and its antioxidant capacity in a commercial beverage called “tuvunu” produced by a local company and comparison with each other. The Folin-Ciocalteau method was used to determine the total phenolic components, while the DPPH and ABTS methods were used to determine the antioxidant capacity. Specifically, 5 species of Siderite were measured together with the Tuvunu beverage which after boiling they measured spectrophotometrically. The statistical analysis was done with the Excell program.
