Fish are an important constituent of the human diet and form one of the main part of Mediterranean diet. Their consumption is considered necessary to achieve a healthy and balanced diet, as they are known of their several beneficial characteristics. Available information on fish nutrition in the Greek seas is very limited. Approximate composition of species depends on many factors such as season, way of maintenance and storage, processing method, etc. All species studied were found to be a source of proteins of high biological value. They are also considered to be a rich source of n-3 fatty acids, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), with low energy content
