The purpose of this senior thesis was the statistical analysis and documentation on the field of goat and sheep farming in Greece from 1960 up to this day. Also the production of goat and sheep milk and their products and the per capita consumption of dairy products were analyzed in the time period stated above.
The field of sheep and goat farming is the most important field of animal production in our country accounting for 58.7% of the total industry and it is the only field that shows signs of development. The number of sheep and goat farms in Greece between 1961 and 2016 has shown a decrease by (72%) from 541.440 to 155.325 farms. The evolution of the sheep population has not changed in the period between 1961 and 2014 and the number of sheep has been maintained at 8.500.000. With regard to the systems in place the flocks are the main farming system while there is a slight decrease in the number of nomads. The evolution of the goat population also between 1961 and 2014 has shown some fluctuations but has managed to maintain its number at 4.200.000 goats. With regard to the systems in place just as the sheep, the flocks are the main farming system while there is a slight decrease in the number of nomads. Moreover the total production of sheep and goat milk is 1.100.000 tons from which the 710.000 tons come from sheep and the 390.000 from goats. In 2014 the production of cheese in Greece was 220.100 tons from which the 165.000 tons came from sheep or goat milk. To conclude the per capita consumption in Greece in 1961 was 13.29kg and in 2013 it was 25.11kg making that an (88.9%) increase.
