Nowadays, the Food & Beverage department is perhaps the most important pillar of investment for a hotel company. The modern trend of all-inclusive holidays packages which has more and more impact in the industry, gives a bigger importance to the right operation of restaurants and bars of a hotel. The quality of the products and services, the facilities and the atmosphere, the persistent accommodation and cover of needs, the as more as possible reduce of the costs, comprise vital importance for the successful operation of the hotel. As its going to be analyzed also in this thesis, the good will and the big number of employees are not enough for the successful operation. The accomplishment or not of the tasks will be determined by the level that they will be defined with the proper plan, the necessary procedures and the right control. The F&B department is constrained to follow specific standards and standard procedures in order to have more possibilities to reach its goals. The costing of the products, the establishment of specific procedures from the moment of order/delivery until the provision/selling, the continuous control and the possible redefinition of goals due to positives/negatives deviations, is in the nature of the department. Parallelly, the department has the obligation to reduce as much as possible its costs, in the same moment that the searching of new selling never stops. One other mainly important goal, is the extra selling of the restaurants and the bars of the hotel. Many hotels function with all-inclusive packages, which means that the consuming of food and drinks is potentially limitless. Whether a hotel is working under this system of not, there is always a need for more and more extra products to be sold. The list and the ways are countless, but in this thesis the chapter of thematic restaurants and wine will be analyzed. Therefore, the analysis will include hotels which choose to provide luxury services. Last but not least, a successful company has powerful foundations. That being said, one of the most important ingredients is the effective hiring and educating system that a company has. Many companies choose to hire low experienced employees in order to low their labor costs. Normally, this tactic leads the companies in some point that they cannot offer a value for money service to their customers. To reduce this problem, the constant education of the hired employees is a very famous method.
